    Here’s a more detailed history of green gumbo (gumbo z’herbes) which is from south Louisiana: The history of gumbo z’herbes is from France and Germany. The real name of gumbo z’herbes is gombo aux herbes in Louisiana French. The name comes from the green soup from France called potage aux herbes. It’s a green soup. It usually uses 9 greens. When making gumbo z’herbes, it’s traditionally eaten on Holy Thursday and to use usually 7 or 9 types of greens when making it. In Germany, there is a green soup that uses 7 greens to make and is eaten specifically on Holy Thursday called seven green soup (Sieben Kräutersuppe) and in some parts of Germany it’s called green Thursday soup (Gründonnerstagsuppe). You can see the 7 or 9 greens of gumbo z’herbes comes from French and German influence. Both the french and German soups are green soups and are similar to each other and both are the origin of the Louisiana version. The name of gumbo z’herbes comes from the french green soup which is the original origin of gumbo z’herbes. The influence from the 7 green Holy Thursday German soup also comes from blending of styles with the french soup, the number of greens used and it being eaten on Holy Thursday. And because in Louisiana, a gumbo is usually a class of soup-stew creations, the name gumbo was used in place of potage for the name gombo aux herbes. Gombo z’herbes is written with a z because it’s based on phonetic French pronunciation of aux + herbes. This history is verified in historic literature from Louisiana. The french were in Louisiana since 1699 and the Germans were in Louisiana since 1721 and both were colonial Louisiana populations.

    It looks good, would love to have a bowl. I’m from the New Orleans area and we make this in my family too and I’ve been eating it since a child. In my family we call it gumbo z’herbes (sounds like gumbo zab, zab rhyming with the word jab). We put greens and cabbage together with a roux, smoked sausage, cubed ham and filé. You can add hot sausage (hot link/chaurice) in it if you like or leave it out. For Catholic lent (my entire family is Catholic) we leave out the meat for religious reasons (not as good as the meat version, but still delicious). Also, my great-grandmother was well known for her gumbo z’herbes among family, friends and neighbors. I know some folks call it green gumbo. My family just uses its original French name. Gumbo z’herbes being a localized corruption of gumbo aux herbes.

    Hi.. I just got around to making this wonderful dish earlier this week!!! And let me tell you--Ms. DaCook is onto something here. I usually don't make my roux this dark but I followed her directions to the letter!!! The flavors were off the charts!!! Healthy??? Not by any means at all!!! But the flavor and taste of this dish is fantastic!!!!!!!!

    Would like a written recipe also ....if you can please....didn't give all the measurements....l can see what your up to....but new cooks might need measurements. How much SOY Sauce? It look so crazy delicious. Love the idea of boiling...then into the oven....l'm old enough l should know this.       thank you... flour and oil... 1/2 cup of each , Fry on medium high until a dark brown color... add water let simmer until thickens... it’s called a Roux..

    I just wanted to say that I loved that you were teaching the next generation... The gumbo looked really good.... Green gumbo is one of my favorites. I've only learned about it in the last 6 months. Mine is very similar but always looking too improve. Keep up the good work.
